Savoury chickpea pancakes. This is one of my favourite baby led weaning pancake recipes. These pancakes contain no egg or dairy, and are naturally gluten free. In fact, they are made using just three simple ingredients; chickpea flour, oil and water. These baby friendly pancakes are perfect as a light lunch or snack.. I used about 1/4 cup of frozen grated coconut, 3/4 cup water and extracted the milk by blending in a Mini blender. 2. Add flour, baking powder and salt to a bowl. 3. Mix them very well and set aside. 4. Add banana, sugar and cinnamon powder. Do not use cassia, choose only true cinnamon. If you do not have skip it.

Add in the egg, flour and cinnamon. Mix it Together. With a fork or whisk, mix the ingredients until just incorporated. Don't go crazy here, just mix until the flour is absorbed. Make Pancakes. Spoon the batter onto a medium skillet over medium-low heat and cook for 3-4 minutes on each side.. Rub the whole surface with oil to grease the pan evenly. Scoop about 2-3 tablespoons of pancake batter into the hot pan and cook for 2-3 minutes or until bubbles forms on top of the pancakes. Slide a spatula under the pancakes and flip on the other side. Cook for an extra 1 minute until light, fluffy, and cooked through.
